Not having the "cable" really does make a smoother cruise control.
The whole pushing on the gas experience is a little different.
Gas mileage on the 4's vs. the 6's would depend on the kind of driving. If doing mainly open road, there's not much difference. In town, there is.
Resale, you get more of your money back on a lower end Accord. The bells & whistles don't do much for resale. It might sell faster, but not for much more.
